Curd Rice Recipe (Dahi Rice Recipe) 

Here's a quick and delicious curd rice recipe:

Ingredients:

  • 1 cup rice, ideally medium-grain or short-grain
  • 1 cup plain yogurt (curd) 
  •  2 cups water
  •  salt to taste.
  • 1 tablespoon ghee
  • 1 tsp mustard seeds
  • 1teaspoon split black gram, or urad dal
  • 1 teaspoon split chickpeas, or chana dal
  • 2 - 3  finely chopped green chilies
  • A few curry leaves
  • 2 tablespoons  chopped coriander leaves (optional)
  • grated ginger (optional)


Instructions:

Cook the Rice

Rinse the rice thoroughly under running water until the water runs clear.

Place the rinsed rice and water in a pot or rice cooker. Rice should be cooked until it is soft and fluffy. To get a softer consistency, you can add a bit more water than normal.

Get the curd mixture ready.

After cooking, let the rice to cool slightly. After cooking, transfer the rice to a mixing bowl.


Mix the cooked rice with the plain yogurt (curd) until the curd is evenly distributed all over the rice. Based on what you want out of creaminess, adjust the amount of curd.

To taste, add salt, completely mix it, and put aside.

Tempering, place a small pan over medium heat with oil or ghee.

Add in the mustard seeds and watch them pop.

Add the chana dal and urad dal. Cook until they take on a golden brown hue.

Add curry leaves and chopped green chilies. Saute until fragrant, about a few seconds.

Take the mixture off of the heat and allow it to cool a little.

Mix the Tempering:

Cover the rice and curd mixture with the tempering processes.

Till everything is well combined, gently fold the spices into the curd rice mixture.

Garnish and Serve: 

Sprinkle grated ginger (if using) and chopped coriander leaves over the curd rice.

You can serve the curd rice warm or cold, depending on your choice.
